Casa Brina is a label under which the Bava family produces some experimental wines and special lots, embellished by the art of various maestros who, along with their works, are housed under the eighteenth-century vaults of the farmstead: very exclusive limited productions of refined taste and image.

Barbera D'Asti D.O.C.
Production area: Hills in the province of Asti
Grapes: 100% Barbera
Alcohol content: 12.5 %
Vinification method: Slow maceration in contact with the skins followed by fermentation under controlled temperature.
Sensorial characteristics: Intense ruby red color, fine, persistent aroma of marasca cherries, flowers and red fruit; elegant, dry taste.
Bottle life: If kept in optimal conditions, over 5 years.
Serving suggestions: Recommended temperature is 16/18°C, depending on the age
Food pairings: Perfect for the entire meal, if aged, preferable with red meat and aged cheese

B a r b e r a d ' A s t i
Superiore D.O.C.
Production area: Della Pieve vineyard, in Cocconato
Grapes: 100% Barbera
Alcohol content: 13.5 %
Vinification method: Slow maceration in contact with the skins followed by fermentation under controlled temperature; particular attention is paid to the intensity of the color, which should be brilliant and generous, meeting traditional expectations for a Barbera Superiore.
Aging: One year in large barrels and barriques of selected woods, then a year of bottle aging before it is marketed.
Bottle life: If kept in optimal condition, over 10 years.
Sensorial characteristics: Intense ruby red color, fine and persistent bouquet of marasca cherries, flowers and red fruit, elegant, dry taste; full-bodied character.
Serving suggestions: Recommended temperature ca. 18°C, depending on the wine’s age.
Food pairings: Perfect throughout the entire meal, if aged, preferable with red meat and aged cheese.

di Castagnole Monferrato DOC
Production area: Castagnole Monferrato and Portacomaro d’Asti. A very rare wine. Casa Brina produces more or less 6,000 bottles a year.
Grapes: 100% Ruché
Alcohol content: 13.5 %
Vinification method: The must is fermented in contact with the skins, with controlled increases in temperature.
Sensorial characteristics: Ruby red color with violet highlights, occasionally with an orange tinge; intense, persistent aroma of grapes, fruity; dry and harmonious to the palate, with moderate tannins, medium body, well-balanced and smooth. There is a recognizable and distinctive aromatic note of spice.
Serving suggestions: Recommended serving temperature, around 16/18°C, depending on the wine’s age.
Food pairings: Its smooth balance and fine spiced aroma make it ideal for pairing with original and international dishes, like Oriental cuisine containing spices, spicy vegetables and special meats, like duck, or with goat cheese.

Our vineyards in Castiglione Falletto, in the heart of the Barolo production area, yield wines of great refinement and fullness, with an alcohol content that guarantees long life in terms of body and structure. Aging in oak barrels makes this Barolo well-balanced, with an intense, ethereal aroma and full, robust and velvety taste.
Vineyard: Winery-owned, in the township of Castiglione Falletto.
Grapes: 100% Nebbiolo
Alcohol content: over 13.5 percent
Aged by the producer: The wine is released after 3 years in wooden barrels and an additional year of bottle aging.
Sensorial characteristics: Garnet red color; ethereal aroma, pleasant and intense; dry, full, robust but velvety.
Bottle life: Over 10 years
Serving suggestions: In order to best appreciate its characteristics, the wine should be decanted at a temperature slightly lower than room temperature, immediately before serving.
Food pairings: Best suited to accompany rich dishes and strong flavors, which match its generosity.

Piedmont
Barolo Chinato is a special wine, made with Barolo DOCG aromatized with the bark of Cinchona calisaya, rhubarb and gentian root, whose active ingredients are extracted by maceration at ambient temperatures. Finally, aromatic spices are added, among them the precious cardamom seed. It is versatile, suitable for many occasions, and particularly appreciated in fine restaurants, served at room temperature as an elegant after dinner drink or steamed with orange peel. A recent discovery, somewhat of a surprise, is that Barolo Chinato is the “ideal liquid” for matching and completing the taste of chocolate with a high cocoa content.

Grapes: 100% Moscato di Canelli
Vineyard: The vineyards lie above Canelli, on the Sant’Antonio hill.
Vinification method: The grapes are picked and crated in boxes of ca. 20 kg and pressed gently using pneumatic presses. The resulting must is decanted at low temperatures and stored in refrigerated vats until bottling.
Bottle life: Consumption is recommended within two years. This Moscato has shown that it will stay fresh even up to 36 months, depending on the vintage. Best kept upright at cellar temperatures (12-13°C).
Alcohol content: 4.5%, with potential alcohol over 12.5%
Sugar: 120 g/l
To the eye it is brilliant, a pleasant, lively lemon yellow.
To the nose it is captivating, decidedly aromatic, an explosion of fruit and flowers, from acacia to sage, from peach to pineapple.
To the palate it is pleasant, sweet and fresh, with a distinct taste of grapes. The tiny bubbles balance out the sweetness and enhance its elegance.
Serving suggestions: Serve cold, between 8 and 10° C.
Food pairings: Cookies of all kinds, including chocolate cookies, and various cakes and pastries. An absolute revelation with banana parfait. Interesting match for blue and sharp cheeses. Perfect for festive occasions and for those who do not usually drink wine.

di Castelnuovo Don Bosco D.O.C.
A rare aromatic wine from Piedmont, with an intense aroma of roses, low alcohol content, sweet and sparkling, perfect for desserts. Not necessarily consumed with food, it can be enjoyed cold and fresh on any occasion, to appreciate its delicate touch. The label bears a Bacchus by Carlo Carosso, a painter whose subjects revolve around classic Greek themes and the mythical history of wine, a detail from a polyptych of the Wine Harvest, Casa Brina private collection.
Grapes: Malvasia di Schierano 100%. The vineyards are located in the municipalities of the most classic area, between Castelnuovo and Albugnano.
Vinification method: The grapes are collected in crates and immediately pressed and destemmed, after which they are cold-macerated for a few hours. Only this technique, carried out in such a way as to preserve the product’s natural characteristics, allows us to extract the most delicate and volatile substances in the skins. The must is then stored at low temperatures until the secondary fermentation, which gives the wine its light, creamy foam and unmistakable fragrance.
Alcohol content: 5.5%, and about 100 g/l of sugar
To the eye it is cherry red.
To the nose it is fresh, fine and well-defined, aromatic, with notes of rose and sweetbriar.
To the palate it is sweet, well-balanced and pleasantly lively, with a hint of tannin to balance the taste and a nice finish.
Storage and serving suggestions: Not a wine to age, best kept cool and away from sunlight and not longer than 2 years to enjoy its bouquet to the fullest; serve cool, around 10° C, in a goblet.
Food pairings: Excellent unaccompanied, splendid with fresh strawberries and fruit salads. Perfect with pastry of all kinds. Well worth a try with ice cream and sorbets, or in cocktails.

Vino Moscato Liquoroso ad uso Sacramentale
Uva: moscato di Canelli al 100%.
Alcool: 16% vol.
Bottiglia: 750 ml, verde per la protezione dalla luce, tappo sughero a T per la miglior conservazione quando aperta. In cartone da 12 bottiglie
Colore: Giallo paglierino con riflessi dorati
Profumo: Aromatico di moscato, non eccessivo, equilibrato.
Gusto: Delicato con morbidezza finale
Adattibilità: Alleluja è stato appositamente pensato per l’uso sacramentale; caratteristiche organolettiche di equilibrio e soprattutto ottima conservabilità anche dopo l’apertura delle bottiglie.
Conservabilità: Si consiglia di tenere le bottiglie nel proprio cartone, lontano da fonti di luce e calore, in ambiente fresco. La bottiglia aperta dovrebbe essere sempre richiusa e conservata al fresco. Il vino si mantiene a lungo anche una volta aperto, ma esprime le sue migliori caratteristiche entro i 7-10 giorni dall’apertura.
